Our Products

Honey
Our honey is harvested from hives located on our farm along the Cedar River. We minimally process our honey in order to preserve all the unique flavors and beneficial qualities of our honey. Our process includes straining, not micro filtering, and extracting in a warm room in order to allow for much freer flowing honey from the frames. We extract our honey once per year in late August or early September and are thrilled to have visitors watch the process.
Jams-Jellies
All of our jams and jellies are made using honey rather than sugar. We use Pomona's Pectin, rather than other commercially available pectin, which allows us to use a fraction of the sweetener used by traditional home recipes. Our typical recipe uses only 1/2 to 1 cup of honey for every 4 cups of fruit, whereas a traditional home recipe uses 4 cups of sugar for every 4 cups of fruit. We truly want the taste of the fruit to be the star of the show. Currently we have limited Jams and Jellies available but we are happy to make a batch by special request.
Eggs
We offer fresh chicken eggs and very limited duck eggs available for purchase from mid spring to late fall. In order to allow our chickens a natural break in laying, we do not artificially light our coop and so egg production almost completely ceases during the winter, making for much healthier hens. Freeze Dried Products
One of our highest priorities is to have no waste on the farm. For us, this meant to find a way to preserve those products we simply couldn't use or sell prior to them spoiling. We purchased a freeze dryer in 2021 and it has been running nearly non-stop since. Not to be confused with dehydrating, freeze drying removes nearly all of the moisture or water content from the food, it has a much crispier, crunchier texture than food that is simply dehydrated.
Currently we are freeze drying fruit that we purchase while we wait on our own trees to mature and hope to transition in the coming years to only products grown here - with the exception of the more tropical flavors we cannot grow here.
In addition to fruit, our customers continued to ask us for freeze dried candies and we were happy to oblige. We offer a wide variety of popular candy.
We have also been experimenting with making freeze dried soups and meals and hope to have these available for sale in 2023 or early 2024!
